How do you determine how many of something to make?

How do you determine the price to charge?

I'm afraid I'll choose wrong and do poorly.

I would really appreciate it if you would address this for me in a blog post. There are probably others who are wondering.

I live in SW Missouri. This is a one day Farm Girl Festival with crafts, demonstrations, music, and food. It's the first year for the fair. I just thought I would give you more info.
